June 24th is Saint John’s day, and in Catalonia people celebrate it with a big fireworks festival the evening before. Locals get together to make bonfires, see the fireworks, toast with cava and… eat coca bread! It’s easy to buy it in any local bakery or cake shop, but you can also make it at home. This is how you make Catalan coca cake:

Prepare the sourdough starter. Make it the day before, diluting the 2 tablespoons of leavening in 3.5 milk tablespoons, then adding 5 tablespoons of flour little by little until the dough is consistent. Keep it in a bowl, covered with film. Once it doubles its size, put it in the fridge until tomorrow, but make sure to remove it from the fridge early, so it’s room temperature when you start making the dough.

Prepare the dough. Mix all ingredients (see below for the list) in a bowl and mix them until it becomes an elastic dough. Then, add the sourdough starter and mix again until it’s homogeneous and elastic.

Let it sit. Put your dough over a wooden counter coated with flour, cover with a clean linen and let it sit for 2 hours or until it doubles volume.Coca de Sant joan with pine nuts

Prepare the coca cake. Using your hands or a rolling pin, stretch it to an oval shape, an move onto an oven tray coated in butter. Let it sit for 2 hours more, then paint with egg yolk and add the toppings (candy fruit, pine nuts or custard).

Bake. Bake in the oven at 200º C (390º F) for 15 minutes. Let it cool before serving: it must be room temperature.
